In Indiana, October is the time of year to warm your soul with some soup. For the rest of this month, I will be posting my favorite recipes for allergy free soups. The one that I am addicted to right now is easy, simple, but delicious!
1 red pepper
1 avocado
2 cups of water
1/4 cup of cilantro and parsley
Couple dashes of cayenne pepper and sea salt. Add as much as little as you want to suit your taste buds.
Makes about 2 servings
Blend all ingredients in a blender. Transfer to a bowl and microwave for about two minutes. Enjoy! If you desire add some corn chips for a crunch!
